Herbed Potato Pancakes

- 1 teaspoon salt divided shopping list
- 2 tablespoons white vinegar shopping list
- 1 1/2 cups shredded potatoes from three small potatoes shopping list
- 3 grains white pepper shopping list
- One inch sprig fresh rosemary shopping list
- 1/4 teaspoon cream of tartar shopping list
- 1 egg shopping list
- 1/2 cup oat flour shopping list
- 1/2 teaspoon baking powder shopping list
- 2 teaspoons bacon fat or vegetable oil shopping list
How to make it
- Pour the vinegar and half the salt in a large bowl.
- Peel the potatoes and swirl around in the vinegar after freshly peeled
- In a mortar crush the pepper grains, add the rest of the salt, cream of tartar, and rosemary. Crush finely.
- Remove the potatoes from the bowl and crack an egg in to the remaining vinegar, add 1/4 cup water, and whip together well.
- Preheat the griddle with a teaspoon of bacon fat.
- Shred the potatoes and stir in to the wet ingredients.
- Pour the crushed herbs over the potatoes.
- Pour the oat flour and the baking soda over all.
- Stir to moisten.
- Spoon a portion of the batter on to the prepared griddle (3 tablespoons each)
- Brown on each side.
- Serve as you like. Presented with yogurt and a sprig of rosemary.
