How to make it

  • Heat oil and 2 tablespoons of the butter in large skillet over medium heat.
  • When butter is melted, add the green onions and cook, stirring occasionally, until slightly softened, about 2 minutes.
  • Add the garlic, spices and red pepper flakes and cook another minute. Remove from the heat and stir in the vodka.
  • Hand crush the tomatoes and add to pan.
  • Return the skillet to medium heat and simmer, stirring often, until the alcohol cooks off, about 6 to 7 minutes.
  • Stir in the heavy cream , remaining butter, and Parmesan.
  • Lower heat to low and cook until the sauce thickens slightly, about 4 minutes.
  • Stir in the basil.
  • Serve over pasta, rice, baked chicken or fried cutlets
