Tapioca Pudding (chocolate)

- 1 1/4 Cup Medium/ Large Pearl Tapioca shopping list
- Note: don't use 'instant' product shopping list
- 4 cups whole milk shopping list
- AND shopping list
- 1 cup heavy creme shopping list

- 5 cups whole milk shopping list
- 1/4 tsp (optional) salt shopping list
- 3 large eggs shopping list
- 1/2 cup white sugar shopping list
- 1 tsp Vanilla shopping list
- 3 tbsp (heaping) Bakers cocoa (powdered, unsweetened) shopping list

- 3 oz Bakers chocolate Squares (unsweetened) shopping list
- 6 oz semi-sweet chocolate chips shopping list
How to make it
- Step 1:
- Soak Tapioca in water
- approx 7 cups needed as the product expands as it soaks,
- soak at least 12 hours, refrigeration not required
- Step 2:
- 1) Separate the eggs, refrigerate the egg whites
- (will be used in the last step of this recipe)
- 2) Combine milk/creme & sugar in a large pot.
- Also, optionally, the salt.
- 3) Simmer milk/sugar product over low-to-medium heat
- until either a skin forms on top of the product
- OR tiny bubbles appear at the edges of the pot.
- Mix well, STIR occasionally.
- 4) Drain the Tapioca, add it to the pot. Stir well to mix.
- 5) continue to simmer...until a Tapioca Pearl is soft & chewy
- (approx 30 minutes). Yes, you'll have to sample the product.
- STIR occasionally.
- 6) Add the Bakers CoCoa or Squares to the pot.
- Stir well to mix into the product.
- 7) Add the chocolate chips.
- Stir well to mix into the product.
- 8) In a small bowl, beat the egg yolks.
- Add small amounts of the hot pudding, stirring well.
- Repeat...until about 1/2 cup of pudding has been added.
- 9) Transfer the egg mixture to the pudding pot, stirring well
- 10) Increase heat..bringing pudding to a boil...
- Stir CONSTANTLY to prevent burning the product.
- 11) When the pudding thickens, remove the pot from the heat
- EMERGENCY, EMERGENCY...if the product doesn't thicken...
- simply stir in 1 2oz package of instant chocolate pudding,
- mix well...(our secret!!!, no one will know the difference)
- 12) Add the Vanilla to the product, stir well to mix
- 13) Beat egg whites until foamy
- 14) FOLD egg whites gently into the pudding. Mix well.
- 15) Transfer pudding to a bowl. Cover with plastic wrap.
- Refrigerate until ready to use
- Step 3:
- Now comes the FUN.. let your guests 'build' their own dessert.
- Serve with sliced Strawberries and
- Chocolate or Vanilla Wafer cookies.
- Let the guests help themselves to all. Recipe serves 5. ENJOY!!
