How to make it

  • Soak dried fruit in hot water for 15 minutes preheat oven 350
  • Beat eggs with electric mixer for 2 minutes or until doubled in volume
  • then add maple syrup, molasses, sour cream ,milk, and butter.
  • In another bowl stir all the dry ingredients together.
  • After all the wet ingredients are incorporated, add the dry all at once, and blend until just mixed.
  • Spray a muffin tin all over. Divide the batter with the 12 muffin cups. These make the muffins with the Muffin Tops of commercial muffin companies. Bake for 25 -35 minutes, or until toothpick comes out clean.
  • Let muffins remain in tin for 5 minutes after coming out of oven. Remove to cooling rack. May be sprinkled w powdered sugar, or eaten plain, or topping with a "Spice Glaze" If going for the glaze, apply with pastry brush, thinly applied takes about half an hour to dry.
