Gingerbread Maple Muffins

- 1 cup raisins, I subbed dried cranberries shopping list
- 2 eggs room temperature shopping list
- 1 cup maple syrup shopping list
- 1 T molasses shopping list
- 1 cup sour cream shopping list
- 1/3 cup milk ( I forgot this ingredient) shopping list
- 1/2 cup melted butter shopping list
- DRY INGREDIENTS shopping list
- 2 1/3 cups flour shopping list
- 1 1/2 t dried ginger shopping list
- 1/2 t allspice shopping list
- 1 t baking soda shopping list
- 1 T. baking powder shopping list
- 1/2 t. salt shopping list
- Spice Glaze (optional) shopping list
- 2 T maple syrup shopping list
- 2 T butter shopping list
- 2 T water 1/2 t. allspice shopping list
- In small saucepan, add the above ingredients stirring constantly over low heat until butter melts. Gradually add 1 1/4 cups confectioners sugar Keep stirring and heating until smoothly blended. shopping list
How to make it
- Soak dried fruit in hot water for 15 minutes preheat oven 350
- Beat eggs with electric mixer for 2 minutes or until doubled in volume
- then add maple syrup, molasses, sour cream ,milk, and butter.
- In another bowl stir all the dry ingredients together.
- After all the wet ingredients are incorporated, add the dry all at once, and blend until just mixed.
- Spray a muffin tin all over. Divide the batter with the 12 muffin cups. These make the muffins with the Muffin Tops of commercial muffin companies. Bake for 25 -35 minutes, or until toothpick comes out clean.
- Let muffins remain in tin for 5 minutes after coming out of oven. Remove to cooling rack. May be sprinkled w powdered sugar, or eaten plain, or topping with a "Spice Glaze" If going for the glaze, apply with pastry brush, thinly applied takes about half an hour to dry.
