How to make it

  • Preheat oven to 375 degrees. Line muffin pan with muffin liners.
  • In medium bowl, add flour and baking powder. Mix together and set aside. In a small bowl, crush 1/4 of the blueberries and set aside.
  • Using electric stand up mixer, add butter, salt, and sugar together and mix until fluffy. Beat in eggs, one at a time. Alternating between flour mixture and buttermilk, add to butter mixture until mixed. Add crushed blueberries and mix briefly.
  • Fold in remaining blueberries. spoon batter into muffin cups and sprinkle top of each muffin with sugar.
  • Bake for 30 minutes. Serve warm.
  • Makes 20 muffins.
