Buttermilk Blueberry Muffins

- 1/2 cup butter (softened) shopping list
- 1 1/2 cups white sugar shopping list
- 1/2 teaspoon salt shopping list
- 2 eggs shopping list
- 1 3/4 cups flour (all purpose) shopping list
- 2 teaspoons baking powder shopping list
- 1/2 cup buttermilk shopping list
- 1 pint fresh blueberries - rinsed and dry shopping list
- additional sugar for topping shopping list
How to make it
- Preheat oven to 375 degrees. Line muffin pan with muffin liners.
- In medium bowl, add flour and baking powder. Mix together and set aside. In a small bowl, crush 1/4 of the blueberries and set aside.
- Using electric stand up mixer, add butter, salt, and sugar together and mix until fluffy. Beat in eggs, one at a time. Alternating between flour mixture and buttermilk, add to butter mixture until mixed. Add crushed blueberries and mix briefly.
- Fold in remaining blueberries. spoon batter into muffin cups and sprinkle top of each muffin with sugar.
- Bake for 30 minutes. Serve warm.
- Makes 20 muffins.
