Trio Fluficious Pancakes With Coolie

- For Pancakes: shopping list
- 2 cups flour shopping list
- 2 tablespoons sugar shopping list
- 4 teaspoons baking powder shopping list
- 1 teaspoon baking soda shopping list
- 1 teaspoon salt shopping list
- 2 cups yogurt yes regular Greek yogurt shopping list
- 4 tablespoons melted butter or oil shopping list
- 1 teaspoon Vanilla shopping list
- 2 tablespoons coco powder shopping list
- 2 eggs separated (whites beaten with a sprinkle into stiff peaks then folded last and egg yolks mixed with dry ingredients and liquids) shopping list
- For Strawberry Chunky Coolie: shopping list
- 2 cups strawberries chopped shopping list
- 1 squeeze of a lemon shopping list
- 1 bark of cinnamon shopping list
- 4 tablespoons brown sugar shopping list
- For Garnish: shopping list
- Hershey’s chocolate sauce shopping list
- caster sugar for dusting. shopping list
How to make it
- For Pancakes:
- Separate the egg whites from the yolks and whip up the whites with a sprinkle of salt into stiff peaks and set aside and pour the yolks into another bowl.
- Now combine the dry ingredients in a dry bowl and sift 3 times except for vanilla and cocoa powder.
- In another bowl mix the wet ingredients combine all the wet ingredients with vanilla with the egg yolks
- Now pour the dry ingredients into the wet ingredients and mix with your wooden spoon.
- Lastly fold in the egg whites and tap the mix 3 times on the counter.
- Take a third of the mixture pour it into a separate bowl and mix in the coco powder.
- Let both vanilla and cocoa batters rest in the fridge for 15 minutes.
- In a well heated thick bottomed non stick pan/skillet, paint it a little bit with oil ladle a scoop of the batter and cook all the vanilla batter till its done each side should take about 1.3 minutes and then go on with the cocoa pancakes. Now put into a wide plate and cover with a dome like lid.
- For Strawberry Coolie:
- Heat a pan and drop a tablespoon of butter and let melt then drop the strawberries and keep stirring till they are almost a chunky mash(about 5 mins) then top with sugar and let incorporate and thicken a little bit then drop lemon juice and cinnamon bark, cook for 3 more mins, turn off the fire remove from stove.
- Assembly:
- Put at the base one vanilla pancake drizzle some choco sauce some of the coolie put the choco pancake another layer of sauce and coolie then top with vanilla pancake layer top with coolie then dust with caster sugar.
