How to make it

  • For the Dough: Take some of the lukewarm milk put it inside a deep porcelain or metal bowl and dissolve the honey in it and sprinkle the yeast. Now put this yeast bowl inside a wide container with some warm water in it and cover the bowl and leave the yeast to do its magic for 15 minutes. Now sift the salt and flour together 3 times, make a well in the middle and pour your whisked egg with the olive oil and yeast mixture in the middle, Work the dough for 3 minutes slowly adding the remaining milk and keep kneading for 10 minutes. Gather your dough. Drizzle a thin film of olive oil into your kneading bowl. Lastly cover the bowl with a warm cloth and let rest on top of a warm oven for an hour to rise. Once it rises, punch it down and knead twice and start rolling it out gently so as not to push out the air from it on a slightly floured surface then roll your dough out into a circle with the thickness of 1 cm.
  • For the Sauce: In a non stick pot fry your onions till they are slightly brown then drop the grated tomato. Wait till all the water of the tomato has evaporated then make a space in the middle of your pot and throw your tomato sauce in without stirring till it gains some dark color then with with the tomato puree and onion then add the garlic and spices with the chicken broth cube and sugar. Stir occasionally and let cook for 7 minutes on medium fire. Turn off the heat and remove from stove, leave uncovered to cool down.
  • Assembling and Baking: Heat your oven to 180 C .Spread your sauce evenly on the pizza with the back of the spoon and put inside the oven to bake for 5 minutes. Then take it out and put the toppings and the cheeses mixed with the olive oil and oregano. Cook for 20 minutes lower thermostat and 5-7 minutes upper thermostat.
