How to make it

  • Soften gelatin in Sherry.
  • Prepare pudding mix according to package directions, using the 1 1/2 cups of milk as the liquid. remove from heat; add softened Sherry and gelatin; stir until dissolved.
  • Stir in honey, and cool the filling for one hour, until partially thickened.
  • Fold in whipped cream.
  • Spoon into pie shell.
  • Cover the top with the crushed peanut brittle, patting down with your hand. Chill. Cuts easier if chilled overnight.

    Wow, this is something my gramps would LOVE! He makes his own sherry and has a particular fondness for buckwheat honey. His birthday's in a month, this is definitely in the running for his dessert!
