Honey Sherried Crunch Pie Recipe
A wonderful pie, easy to put to gether and best if it chills overnight. The sherry mellows out and it becomes smoother tasting, if that is possible. Plus the long chill makes it much much easier to cut.

Ingredients
  • 9 inch pie shell baked
  • 1 Tablespoon of unflavored gelatin
  • 1/2 cup of medium dry Sherry
  • 1 pkg. (3 1/2 oz.) vanilla pudding mix NOT INSTANT
  • 1 1/2 cup of milk
  • 1/4 cup of honey
  • 1 cup of heavy cream whipped
  • 1 cup of coarsely crushed peanut brittle

Directions
  1. Soften gelatin in Sherry.
  2. Prepare pudding mix according to package directions, using the 1 1/2 cups of milk as the liquid. remove from heat; add softened Sherry and gelatin; stir until dissolved.
  3. Stir in honey, and cool the filling for one hour, until partially thickened.
  4. Fold in whipped cream.
  5. Spoon into pie shell.
  6. Cover the top with the crushed peanut brittle, patting down with your hand. Chill. Cuts easier if chilled overnight.

Wow, this is something my gramps would LOVE! He makes his own sherry and has a particular fondness for buckwheat honey. His birthday's in a month, this is definitely in the running for his dessert!
