How to make it

  • Preheat oven 350 Spray 9 inch pie plate with non-stick pam
  • Saute the bacon , adding the onion and pepper as the bacon starts to brown.
  • In a separate bowl beat the eggs , half & fhalf and sour cream together. Spray a 9 inch pie plate and pour half of the eggy mixture into the pie plate . ( I used 8 X 8 inch pyrex). Drain bacon /onion/ pepper and spread it over the egg mix. Top with the rest of the eggy mixture. I added the basil and zucchini in the second pouring of eggy mix.
  • Bake 35 minutes.

    Excellent! The red pepper, zucchini, and fresh basil are a match made in heaven. We are not huge quiche fans, but this earned 2 thumbs up from both hubby and myself. However, we both felt it needed salt and pepper. Next time will add some to the egg mixture. It should be noted that this did not fit in a standard 9” pie plate. Needs to be a deep dish pie plate.
