Bacon & Red Pepper Quiche

    Excellent! The red pepper, zucchini, and fresh basil are a match made in heaven. We are not huge quiche fans, but this earned 2 thumbs up from both hubby and myself. Didn’t miss the crust or the cheese. However, we both felt it needed salt and pepper. I made a few changes, but nothing major. I used heavy cream instead of half ‘n half. Also sauteed the zucchini until slightly softened. Instead of mixing the fresh basil in the egg mixture, I sprinkled it over the top. The aroma while this baked was absolutely fabulous! Would make anyone hungry. It should be noted that it did not fit in a standard 9” pie plate. It needs a deep dish! A half a zucchini is a lot! Although, it seems most of the grocery stores now only sell miniature zucchini so it probably would have fit had I used one of those. Mine was a standard small to medium sized zucchini from the garden. Red peppers and onions also came from the garden. I didn’t want to waste the leftover egg mixture so I scrambled it in a skillet and ate it later.

    Beautiful photo Diz! And it looks and sounds delicious! I love that you used veggies from your garden. Good call on sautéing the zucchini; I love to sauté zucchini until it's golden crisp--takes on such a better flavor and doesn't get soggy. :)

    Gorgeous Photo DIZ! I love quiche (well, depends on what's in it) and believe it or not I've never made one and don't know why. The recipe looks more like a frittata which is equally as good and less calories, lol!!

    Delicious looking photo DIZ! I've had my eye on this one since it was posted. I would have sauteed the zucchini as well. Your right though, our grocery stores zucchini's are always tiny compared to what they used to be!

    LindaLMT--I've only had frittata a couple of times. Quiche, frittata, strata, baked omelette, etc,----It's all semantics to me. I can't tell one type of egg dish from the other. lol!

    Mommyluvs2cook--I think you would like this recipe. It just occurred to me. I wonder if it's supposed to be 1/2 cup of zucchini? That would make more sense.
