How to make it

  • In a medium bowl, cream together 1/2 cup confectioners sugar and butter until smooth,
  • Stir in vanilla extract and mix well,
  • Combine flour, salt, and 1/2 tsp cinnamon in a separate bowl,
  • Stir flour mixture into the creamed butter mixture and combine to form a stiff dough,
  • Place the dough onto a large piece of waxed paper and refrigerate for 1 hour or overnight,
  • Preheat oven to 350º and grease cookie sheets,
  • Mix together 1 cup of confectioners sugar and ground cinnamon,
  • Using a teaspoon or a small cookie scoop, roll each cookie into a small ball,
  • Roll each ball in the confectioners sugar, cinnamon mixture and place on the prepared cookie sheets,
  • Bake for 15-20 minutes in the preheated oven until nicely browned,
  • Cool cookies on wire racks.
  • **If you do not refrigerate dough, the cookies will melt together into plat cookies.
