- 1 tbsp butter shopping list
- 1 small onion, chopped shopping list
- 1 small green pepper, cored, seeded and chopped shopping list
- 1 small red sweet pepper, cored, seeded and chopped shopping list
- 8 eggs shopping list
- 1/4 cup milk shopping list
- 3/4 cup shredded cheddar cheese shopping list
- 2 slices ham (2 oz) cut into thin ribbons, about 1/2 cup shopping list
- 1/4 tsp salt shopping list
- 1/4 tsp black pepper shopping list
How to make it
- . Heat oven to 350. Coat a 10-inch nonstick skillet (with oven proof handle) with cooking spray.
- 2. Heat butter in skillet over medium heat. Add onion and pepper and cook for 5 minutes, stirring occasionally.
- 3. In a large bowl, whisk together eggs, milk, 1/2 cup of the cheese, ham, salt and pepper. Pour mixture into skillet and stir to combine. Cook over medium-low heat for 5 minutes. Stir gently halfway through cooking.
- 4. Sprinkle remaining 1/4 cup of the cheese on top. Place skillet in oven; bake at 350 for 15 minutes.
- 5. Remove from oven. To serve, gently slide frittata onto serving plate and cut into 8 wedges.
