How to make it

  • . Heat oven to 350. Coat a 10-inch nonstick skillet (with oven proof handle) with cooking spray.
  • 2. Heat butter in skillet over medium heat. Add onion and pepper and cook for 5 minutes, stirring occasionally.
  • 3. In a large bowl, whisk together eggs, milk, 1/2 cup of the cheese, ham, salt and pepper. Pour mixture into skillet and stir to combine. Cook over medium-low heat for 5 minutes. Stir gently halfway through cooking.
  • 4. Sprinkle remaining 1/4 cup of the cheese on top. Place skillet in oven; bake at 350 for 15 minutes.
  • 5. Remove from oven. To serve, gently slide frittata onto serving plate and cut into 8 wedges.

    Sounds yummy. Cannot wait to try this, will make a great breakfast for my beach guests and my family. Believe it would/could be very low carb.
