Zucchini Spice Cake

- 1/3 c boiling water shopping list
- 2 c finely chopped zucchini, about 3 shopping list
- 2 c flour shopping list
- 1 1/2 c sugar shopping list
- 1 1/4 tsp baking powder shopping list
- 1 tsp salt shopping list
- 1 tsp cinnamon shopping list
- 1 tsp cloves shopping list
- 1/2 c vegetable oil shopping list
- 3 eggs shopping list
- 1 tsp vanilla extract shopping list
- 1 c chopped nuts shopping list
- FROSTING shopping list
- 8 oz cream cheese, softened shopping list
- 1/2 c butter shopping list
- 4 c powdered sugar shopping list
- 1 tsp vanilla or lemon extract shopping list
- 2/3 tsp grated lemon peel shopping list
- 3 tsp lemon juice shopping list
How to make it
- Pour boiling water over chopped zucchini. Preheat oven to 350 degrees. Grease and flour an oblong pan, 13 x 9 x 2 inches or two layer pans. In a large bowl, beat zucchini and remaining ingredients on low speed, scraping bowl constantly. Beat on medium speed, scraping bowl occasionally, 2 minutes. Pour into pan. Bake until wooden toothpick inserted in center comes out clean, 45-50 minutes. Cool about 30 minutes.
- For frosting: Cream butter and cream cheese. Gradually stir in powdered sugar. Add extract, lemon peel, and lemon juice. Whip until smooth and frost cake.
