How to make it

  • Pour boiling water over chopped zucchini. Preheat oven to 350 degrees. Grease and flour an oblong pan, 13 x 9 x 2 inches or two layer pans. In a large bowl, beat zucchini and remaining ingredients on low speed, scraping bowl constantly. Beat on medium speed, scraping bowl occasionally, 2 minutes. Pour into pan. Bake until wooden toothpick inserted in center comes out clean, 45-50 minutes. Cool about 30 minutes.
  • For frosting: Cream butter and cream cheese. Gradually stir in powdered sugar. Add extract, lemon peel, and lemon juice. Whip until smooth and frost cake.
