Orange Kumara (sweet Potato) Fruitcake

- 125 g butter softened shopping list
- 1 cup brown sugar shopping list
- 2 egg large shopping list
- 1 cup orange sweet potato cooked cooled mashed shopping list
- 2 cup self-raising flour shopping list
- 1 tsp ground mixed spice shopping list
- 1/2 tsp ground nutmeg shopping list
- 1/2 tsp ground mace shopping list
- 1/2 tsp ground cinnamon shopping list
- 2 cup mixed dried fruit shopping list
How to make it
- Beat butter and sugar until creamy using an electric beater for approximately 10 minutes.
- Whisk the 2 eggs in a separate bowl, add to the butter and sugar mixture.
- Sift flour and spices twice. Combine with egg mixture.
- Add cooled kumera, mixed fruit beat well until all combined.
- Pour into a greased 20 cm cake tin.
- Bake at 150C for 1 hour or until an inserted skewer comes out clean.
- Place on cake rack, rap with a tea-towel while cooling to keep the cake moist.
