How to make it

  • Beat butter and sugar until creamy using an electric beater for approximately 10 minutes.
  • Whisk the 2 eggs in a separate bowl, add to the butter and sugar mixture.
  • Sift flour and spices twice. Combine with egg mixture.
  • Add cooled kumera, mixed fruit beat well until all combined.
  • Pour into a greased 20 cm cake tin.
  • Bake at 150C for 1 hour or until an inserted skewer comes out clean.
  • Place on cake rack, rap with a tea-towel while cooling to keep the cake moist.

    Hi, Ditty! Great recipe - actually made something like this aboard our sailboat. Love Brisbane --- we anchored near the Story Bridge and spent a lot of time in the City. Met some terrific school girls having their lunch break near the sculpture. Asked if I could take a few pictures of them. The pictures are award winning! Such sweet and gentle students in their uniforms and hats.
    Your recipe will bring back some fond memories. Thanks for posting. Hope all is well in Brisbane!
