How to make it

  • Preheat oven to 350°F. Grease a 8 1/2 x 4 1/2 inch (6 cup) loaf pan.
  • Whisk together thoroughly: flour, salt, baking soda, baking powder.
  • In large bowl, beat on high speed until light in color and texture (2-3 mins): butter and sugar.
  • Beat in the flour mixture until blended (consistency of brown sugar).
  • Gradually beat in: 2 large eggs, lightly beaten.
  • Fold in until just combined: mashed bananas and nuts.
  • Scrape batter into pan and spread evenly. Bake for 50-60 mins (until toothpick inserted in center comes out clean). Let cool in the pan on a rack for 5-10 mins before unmolding to cool completely on rack.
