How to make it

  • Preheat the oven to 355 degrees F.
  • Microwave the butter until melted, about a minute. Stir in the brown sugar.
  • Sift together the flour and baking powder in to a large mixing bowl.
  • Grate the carrots and add to the bowl. Measure the lemon juice, raisins on to the carrot.
  • Break an egg on top of all, stirring to mix through the carrot. This does not need to be thorough.
  • Stir in the butter-sugar mixture, and combine well.
  • Scoop the thick batter in to your muffin tin. I use silicon or paper liners.
  • Bake for 50 minutes until set, with a crispy top.
