Carrot Muffins

- 250g flour shopping list
- 225g grated carrot shopping list
- 125g butter shopping list
- 250g brown sugar shopping list
- 2 teaspoons cinnamon shopping list
- 1 tablespoon lemon juice shopping list
- 1.5 teaspoons baking powder shopping list
- 1 egg shopping list
- 1/4 cup raisins shopping list
How to make it
- Preheat the oven to 355 degrees F.
- Microwave the butter until melted, about a minute. Stir in the brown sugar.
- Sift together the flour and baking powder in to a large mixing bowl.
- Grate the carrots and add to the bowl. Measure the lemon juice, raisins on to the carrot.
- Break an egg on top of all, stirring to mix through the carrot. This does not need to be thorough.
- Stir in the butter-sugar mixture, and combine well.
- Scoop the thick batter in to your muffin tin. I use silicon or paper liners.
- Bake for 50 minutes until set, with a crispy top.
