Tuscan Chicken Cake W Tomato Basil Relish

- 3 c. cooked chicken, shredded and chopped shopping list
- 1 c seasoned Italian crumbs shopping list
- 1/4 c mayonnaise shopping list
- 1 egg, slightly beaten shopping list
- 1/4 c basil pesto shopping list
- 2 t honey mustard shopping list
- 1/3 c finely chopped roasted red peppers shopping list
- 1/3 c finely chopped red onion shopping list
- 2 T olive oil shopping list
- 1 pkg salad greens shopping list
- 1/3 c prepared balsamic vinegar and oil dressing shopping list
How to make it
- In a large bowl mix together chicken, 1/2 c Italian crumbs, mayo. ,egg, pesto, honey mustard, red peppers, and onion. Using a 1/3 c form 8 cakes; ligtly cover with the other half c of crumbs.
- In a large non-stick frying pan, heat oil over medium- high heat. Add chicken cakes and cook until medium brown, about 3 minutes per side.
- Toss the greens w the dressing and divide onto 4 plates. Place 2 chicken cakes on each ; drizzle with Golden Ailoi. Top each cake w Tomato-Basil Relish.
- Golden Ailoi ------- whisk together 1/4 cup mayo with golden mustard.
- Tomato-Basil Relish---Mix together 1 cup seeded and chopped plum tomatoes, 1/3 cup red onion, 3 T. chopped drained sun-dried tomatoes, 2 T. slivered basil leaves, 2 T Balsamic vinegar and oil dressing, and 1 T pesto.
