How to make it

  • In a large bowl mix together chicken, 1/2 c Italian crumbs, mayo. ,egg, pesto, honey mustard, red peppers, and onion. Using a 1/3 c form 8 cakes; ligtly cover with the other half c of crumbs.
  • In a large non-stick frying pan, heat oil over medium- high heat. Add chicken cakes and cook until medium brown, about 3 minutes per side.
  • Toss the greens w the dressing and divide onto 4 plates. Place 2 chicken cakes on each ; drizzle with Golden Ailoi. Top each cake w Tomato-Basil Relish.
  • Golden Ailoi ------- whisk together 1/4 cup mayo with golden mustard.
  • Tomato-Basil Relish---Mix together 1 cup seeded and chopped plum tomatoes, 1/3 cup red onion, 3 T. chopped drained sun-dried tomatoes, 2 T. slivered basil leaves, 2 T Balsamic vinegar and oil dressing, and 1 T pesto.
