How to make it

  • Heat the oven to 400f/200c/180C fan/gas 6;
  • Lightly oil an ovenproof foil or foil lined tray;
  • Mix all the spices together in a small dish;
  • Coat the chicken all over ensuring everything is equally covered;
  • Place the thighs on the tray;
  • Place tray in oven and cook for some 35 to 45 minutes or so, turning at least once halfway through so that the thighs become moist, tender and crispy;
  • May need a bit longer for Bone-in thighs
  • When turning again lightly spray a little oil on top side of thighs and place oiled side down;
