How to make it

  • If you have an Instant Pot, use these directions in full. If not, just follow all steps up until you would pressurize this dish and instead cover and simmer or slow cook for an equivalent period of time. Slow cooking is usually 3-5 hours, stovetop cooking 1-3 hours covered on simmer.
  • 1) Place beef chunks, garlic, pepper, Worcestershire sauce, salt, olive oil, fennel, fine herbs seasoning on the saute setting in your Instant Pot or skillet and brown the beef chunks with the seasonings for about 10 -12 minutes or until somewhat browned.
  • 2) Mix the wine, warm water and add the bouillon cube and dissolve in a cup, adding that to the pan, then turn the saute setting off at this point. You want to let it rest while you peel your potatoes, and carrots etc. Be sure to make those veggies into large chunks, about 1.5 to 2 inch square, you dont want them small diced.
  • 3) Mix in the potatoes & carrots to the stew and cover the Instant Pot, sealing it with the knob set to pressure cook, then press the "Stew" button. It should set a 35 minute timer. You can relax, check your email, call a friend, take a walk etc but be sure to come back as the timer is going off.
  • 4) Once the timer goes off, allow about a 5-10 minute natural release and then release the valve. ***Do not power off the Instant Pot just yet***, Leave it on Lo with the timer on, it should now be showing how many minutes are elapsing since it stopped the pressurizing.
  • 5) Opening the pot, add your tomato paste, mixed with the flour and enough water to make a slurry. Stir that in carefully, making sure to gently fold in. The veggies might be soft enough that they are falling-apart tender. Leave it on Lo for these minutes but be sure to attend it, be nearby and leave it on Lo just as long as needed or ideally not longer than 20 minutes. Stir more occasionally.
  • 6) Get your glass of red wine or toast your french bread / garlic bread, dish up the salad greens, set the table etc. The sauce is thickening that whole time. The lid of the Instant Pot can remain off to the side, so that your stew has time to reduce a bit and thicken. If you need more time, turn it off and place the lid back on to keep warm without continuing to cook. Your house should smell amazing. Serve with bread and salad.
  • You might want to place extra salt or pepper / hot sauce out for those of us who can never have stew without it. ;) Enjoy
