Blue Cheese Butter

- 1 stick unsalted butter, slightly softened shopping list
- 1/4 cup crumbled blue cheese (I used St. Agur) shopping list
- 2 tsp. chopped fresh thyme shopping list
- Salt and freshly ground pepper shopping list
How to make it
- Combine the butter, cheese and thyme in a bowl and season with salt and pepper to taste. (Go easy on the salt as the Blue Cheese is quite salty as well)
- Cover the bowl and refrigerate for 30 minutes.
- When your steaks are done, rest them and add a tbsp. of the Blue Cheese butter on the top while they rest)
- Enjoy!
- *If you were to make a larger amount of the Blue Cheese butter up, I'd fashion it in to a 'log' shape, wrap it in parchment paper and keep it in the freezer until I had more steaks to flavour.
- *A bit of horseradish might be nice in this too! Or minced garlic!
- *This might also be good in stuffed mushrooms!
