How to make it

  • Combine the butter, cheese and thyme in a bowl and season with salt and pepper to taste. (Go easy on the salt as the Blue Cheese is quite salty as well)
  • Cover the bowl and refrigerate for 30 minutes.
  • When your steaks are done, rest them and add a tbsp. of the Blue Cheese butter on the top while they rest)
  • Enjoy!
  • *If you were to make a larger amount of the Blue Cheese butter up, I'd fashion it in to a 'log' shape, wrap it in parchment paper and keep it in the freezer until I had more steaks to flavour.
  • *A bit of horseradish might be nice in this too! Or minced garlic!
  • *This might also be good in stuffed mushrooms!
