Beef Barley Soup

- A very large pot like a Dutch oven pot with top shopping list
- I didn't measure anything but the barley. shopping list
- I cup pearl barley shopping list
- Water or beef stock fill half way shopping list
- 1 onion diced shopping list
- 1 large carrot diced shopping list
- Diced green pepper optional shopping list
- A couple of shots of Worcestershire sauce shopping list
- cabbage as much as you want chopped shopping list
- Salt and pepper to taste shopping list
- I used leftover roast beef pot roast chopped shopping list
- I can of diced tomatoes shopping list
- I used water this time instead of broth but I did add 3 pkgs of Knorr powdered beef. You can add whatever brand you have on hand. The veggies make a nice broth on their own along with the beef. shopping list
How to make it
- In a large pot like a Dutch oven full with beef stock or water about half full.
- Chop veggies
- Add barley and veggies and beef bring to boil and then simmer for an hour or more. I leave out to tomatoes and cabbage until everything else is cooked after an hour or so then I add them. Stir often to make sure the barley doesn't stick to the bottom of the pan. Easy and delicious and freezes well. Photo to follow. Enjoy! Nothing is laid in stone in this recipe.
