How to make it

  • 1. Preheat oven to BROIL and HI setting. Clean mushrooms by taking a damp paper towel and wiping them.
  • 2. On medium heat place two tablespoons of the garlic butter and one tablespoon of olive oil to stop butter from burning into a small pan.
  • 3. Once melted, place mushrooms down on the pan and DO NOT TOUCH. Allow mushrooms to develop colour, create a crust and release all the extra water inside. Flip once complete and press down you will see more water leaving. This allows for a better end product.
  • 4. While the mushrooms are in the pan, take your sliced tomatoes and place a paper towel and pat dry. Add some salt to it and let sit. Again the less moisture in these tomatoes the better.
  • 5. On a foil lined tray place your mushrooms cap side up. Take the remaining table spoon of garlic butter an drizzle over mushrooms.
  • 6. Season and add cheese and tomatoes. Place into oven and watch for the cheese to brown and bubble.
  • 7. Remove from broil and top with pepperoni and more cheese with some extra seasoning. Place under broil and set to low
  • 8. Remove once additional cheese has browned and plate. Add basil and balsamic glaze. Serve once it has a few minutes to cool
