How to make it

  • Start the water for the noodles, when it starts boiling add the noodles. Cook for 12 minutes, drain, then rinse with cold water. Remember all the while these are cooking continue doing the sauce. It should work out to be ready about the same time!!!

  • Heat a dutch oven to medium and add 4 tablespoons of butter along with 1/2 cup minced garlic cloves and 2 cups of chopped onion. Cook the onion until it becomes translucent.
  • Now add 10 ounces of fresh spinach and stir until the spinach wilts. (I have to wait on this until I have made the small pan of lasagna. Then add to sauce, along with the mushrooms.)
  • Then add in 6 cups of heavy cream, 3 cups of grated Parmesan, 36 ounces ricotta cheese, 1/2 teaspoons black pepper, 1 Tablespoon himalayinn salt, and 6 cups of shredded/sliced chicken thighs, per-cooked.
  • Once the heavy cream comes to a slight simmer, remove it from the heat.
  • In a 7 x 10 inch deep baking dish AND a 9 x 13 inch deep baking dish - Spray the bottoms with extra virgin olive oil. Begin adding in your cooked lasagna noodles. I got 3 across in the big pan and 2.5 across in the small pan.
  • Now add a generous amount of your chicken Alfredo mixture on top of the lasagna noodles, then add sliced tomatoes (if using) and sprinkle on lots of the shredded mozzarella cheese.
  • Repeat layering the lasagna noodles, chicken Alfredo, sliced tomatoes (if adding) and shredded mozzarella until all (18) of your lasagna noodles are assembled. Now cover the lasagna with foil and bake at 350 degrees Fahrenheit for 40ish minutes, for the small pan and around an hour for the regular/larger pan.
  • Remember to take the foil off of the Lasagna for the last 10 minutes of cooking!

  • IF you want to just use canned diced tomatoes, instead of fresh sliced or diced, minus the liquid, you may be able to do that, I had the fresh so I used them! Save the juice from the tomatoes, freeze it, add it to salsa when you make that!

  • I used 7 1/2 noodles on the the smallish pan and10 1/2 noodles on the regular/larger pan.
