Healthy Pickled Beets

- 8 medium-sized fresh beets shopping list
- 1 cup apple cider vinegar shopping list
- 1/2 cup sugar shopping list
- 2 Tablespoons Olive Oil shopping list
- 1-1 / 2 teaspoon whole cloves shopping list
- 1-1 / 2 teaspoon mustard seed spices whole shopping list
- 1/2 tsp pink himalayan salt shopping list
How to make it
- Scrub the beets and trim the tops to 1 inch.
- Put it in a dutch oven; Add water to cover.
- Bring it to a boil.
- Reduce Heat Simmer, covered, 25-30 minutes or until cooked.
- Lifted from cool water.
- Peel and slice beets.
- Put in a bowl and set aside.
- In a small saucepan, combine vinegar, sugar, cloves, mustard seed, olive oil and salt.
- Bring to a boil for 5 minutes.
- Pour over the beets. freezer for at least an 1 hour.
- Stir/toss before serving.
