How to make it

  • Scrub the beets and trim the tops to 1 inch.
  • Put it in a dutch oven; Add water to cover.
  • Bring it to a boil.
  • Reduce Heat Simmer, covered, 25-30 minutes or until cooked.
  • Lifted from cool water.
  • Peel and slice beets.
  • Put in a bowl and set aside.
  • In a small saucepan, combine vinegar, sugar, cloves, mustard seed, olive oil and salt.
  • Bring to a boil for 5 minutes.
  • Pour over the beets. freezer for at least an 1 hour.
  • Stir/toss before serving.
