How to make it

  • Preheat the oven to 401°F (200 ° C).
  • Gently press tortillas into large muffin cups or 1-cup (250 mL) ramekins; Reserve.
  • In a large nonstick skillet, melt butter over medium heat and cook onions, peppers and ham, about 3 minutes, or until ingredients are softened.
  • Add the eggs and, using a spatula, stir in the pan.
  • Add cream cheese and continue stirring,about 3 minutes, or until egg is almost firm.
  • Remove from the heat and divide among the tortilla cups.
  • Sprinkle top with Asiago cheese and bake for about 10 minutes, or until tortillas are golden and cheese is bubbling.
  • Serve with your choice of salsa.
