Vegetable Soup

- 1 pound Potatos, Prefer the Golden ones, so creamy and delicious shopping list
- 4 whole carrots shopping list
- 2 whole Leeks or Shallots shopping list
- 2 whole chicken thigh, skinless, boneless is easier shopping list
- Olive oil, just enough to coat the pan for searing the chicken shopping list
- 1 Tablespoon Fresh minced Garlic shopping list
- 1 teaspoon Pink Himalayan Salt shopping list
- 1/2 teaspoon Pepper, fresh ground shopping list

- 1 can of diced tomatoes (optional) shopping list
- 2 cups of chopped up cabbage (optional), I know it looks like a lot but it is mostly water and will shrink up a lot!!! shopping list
How to make it
- Wash the potatoes and carrots, I like the peels on both of them. Peel if you prefer.
- Cut potatoes & carrots into small pieces.
- Split the leeks lengthwise and wash them in water, then slice them.
- Slice chicken thighs to thin strips, or just dice them.
- In a saucepan with a little olive oil, brown the chicken thighs, leeks and garlic for 5 to 6 minutes.
- Season with salt and pepper.
- Then add the previously washed potatoes and carrots, then cover everything with cold water. (If adding cabbage and tomatoes, do so now!)
- Cook at a low boil for 20 min.
- Serve in bowls.
- Adjust seasoning according to taste.

- You could put this all into a slow cooker after searing the chicken, just let it cook as long as you like.
