How to make it

  • Wash the potatoes and carrots, I like the peels on both of them. Peel if you prefer.
  • Cut potatoes & carrots into small pieces.
  • Split the leeks lengthwise and wash them in water, then slice them.
  • Slice chicken thighs to thin strips, or just dice them.
  • In a saucepan with a little olive oil, brown the chicken thighs, leeks and garlic for 5 to 6 minutes.
  • Season with salt and pepper.
  • Then add the previously washed potatoes and carrots, then cover everything with cold water. (If adding cabbage and tomatoes, do so now!)
  • Cook at a low boil for 20 min.
  • Serve in bowls.
  • Adjust seasoning according to taste.
  • ~ ~ ~ ~ ~
  • You could put this all into a slow cooker after searing the chicken, just let it cook as long as you like.
