Chicken Adobo

- 1 kg chicken cut into serving portions. Any chicken part will work, I prefer thighs shopping list
- 0.5 cup soy sauce shopping list
- 0.25 cup vinegar shopping list
- 1 bulb garlic (peeled and smashed) shopping list
- dash of pepper shopping list
- 1 - 2 bay leaves shopping list
- 1 - 2 tablespoons white sugar shopping list
How to make it
- Mix all the ingredients except the bay leaves and sugar then let sit for 30 mins in the fridge. Overnight marinating is preferred.
- Put all in a saucepan on low to medium heat until it simmers (about 10mins)
- Put 1 cup water (if there are a lot of water from simmering the chicken in the first 10mins, start with 3/4 cup water) and add bay leaves (if you want sweet adobo, add 1-2 Tbsp of sugar depending on how sweet you want, 1Tbsp is just a bit sweet)
- Simmer until chicken is tender (about 20-30mins) and sauce has thicken slightly
- Adjust taste if needed (e.g. add a tsp to a tbsp of vinegar if too salty, or soy sauce if too sour, add a bit of water and sugar if taste is too strong).
- To check if chicken is well cooked, poke 1 part with a bone ie drumstick and check if it’s cooked through ie no blood
- Cook another 5-10mins on low heat after adjusting the taste
