Ingredients

  • 1-Quart Glass Bottle shopping list
  • 8 to 10 whole vanilla beans shopping list
  • Vodka, cheap is fine, it will be flavored with the vanilla bean, 90 proof is preferred - but 80 will work shopping list

  • Use grade B beans, also known as the extract bean, they are dryer and more full of flavor. Grade A is more plump/wet, but they make a lighter/not as stronge in flavor as the Grade B. 1 vanilla bean is equal to 1 Tablespoon vanilla Paste. 1 Ounce of Vanilla Paste is equal to 1 Tablespoon. shopping list

  • My homemade vanilla paste calls for 10 post-extracted, vanilla beans, so these used above after 2 times of making the vanilla extract. So you can use 8 beans and just use 8 beans in the vanilla paste, or use 10 and use all 10 beans in the paste. Either way NOTHING of the beans will be wasted! shopping list

How to make it

  • Drop your vanilla beans into the your quart jar/bottle.
  • Add vodka to fill the jar.
  • Place the jar in a dark area to sit and extract the vanilla flavoring from the beans.
  • In about 6 to 8 weeks it should be ready.
  • I find that as soon as I have one bottle ready, I start another bottle.
  • NOTE: When the first bottle is empty, just fill with vodka again. The beans are good for 2 rounds!
  • NOTE 2: Some people prefer to slice open the beans for quicker extraction. I like to keep them whole, then after the 2 times through the extraction process, I like to make vanilla paste with the beans. This is so good in baking!!!
  • NOTE 3: BTW, I use my vanilla extract in my morning cacao drink and my evening smoothie. I go through a lot of vanilla extract! The paste is for baking.
