Pasta and Pepper Salad

- 3 each of orange and yellow bell peppers shopping list
- 1 lb. uncooked farfalle (bow tie) pasta shopping list
- 2 lemons shopping list
- 2/3 c. bottled or homemade balsamic dressing shopping list
- 8 oz. mozzarella or Fontina cheese, cubed shopping list
- 1 pt. cherry tomatoes, cut in half shopping list
- 3/4 c. each of basil and mint, stacked and cut into narrow strips shopping list
How to make it
- Remove broiler pan from broiler and preheat broiler.
- Bring a large pot of salted water to boil. While the water comes to a boil, cut peppers in half lenthwise, remove stems and seeds. Place cut side down on broiler pan and broil until the skin is charred. Remove, place in a medium bowl and cover, let stand until cool enough to handle.
- When the water boils, add pasta and cook according to package directions. Drain and rinse with cold water. Grate 2 tsp. of peel from lemons and squeeze 3 TB. juice; mix with balsamic dressing
- Slip skins off peppers and cut into narrow strips. Transfer pasta to a large serving bowl. Add pepper strips, cheese, tomatoes, basil, mint and balsamic dressing. Toss to mix. Chill until ready to serve.
