How to make it

  • Remove broiler pan from broiler and preheat broiler.
  • Bring a large pot of salted water to boil. While the water comes to a boil, cut peppers in half lenthwise, remove stems and seeds. Place cut side down on broiler pan and broil until the skin is charred. Remove, place in a medium bowl and cover, let stand until cool enough to handle.
  • When the water boils, add pasta and cook according to package directions. Drain and rinse with cold water. Grate 2 tsp. of peel from lemons and squeeze 3 TB. juice; mix with balsamic dressing
  • Slip skins off peppers and cut into narrow strips. Transfer pasta to a large serving bowl. Add pepper strips, cheese, tomatoes, basil, mint and balsamic dressing. Toss to mix. Chill until ready to serve.
