Pasta And Pepper Salad Recipe
A wonderfully flavorful salad. It takes some prep but it's worth the effort.

Ingredients
  • 3 each of orange and yellow bell peppers
  • 1 lb. uncooked farfalle (bow tie) pasta
  • 2 lemons
  • 2/3 c. bottled or homemade balsamic dressing
  • 8 oz. mozzarella or fontina cheese, cubed
  • 1 pt. cherry tomatoes, cut in half
  • 3/4 c. each of basil and mint, stacked and cut into narrow strips

Directions
  1. Remove broiler pan from broiler and preheat broiler.
  2. Bring a large pot of salted water to boil. While the water comes to a boil, cut peppers in half lenthwise, remove stems and seeds. Place cut side down on broiler pan and broil until the skin is charred. Remove, place in a medium bowl and cover, let stand until cool enough to handle.
  3. When the water boils, add pasta and cook according to package directions. Drain and rinse with cold water. Grate 2 tsp. of peel from lemons and squeeze 3 TB. juice; mix with balsamic dressing
  4. Slip skins off peppers and cut into narrow strips. Transfer pasta to a large serving bowl. Add pepper strips, cheese, tomatoes, basil, mint and balsamic dressing. Toss to mix. Chill until ready to serve.
