Zucchini Muffins, No Sugar

- 1 cup flour shopping list
- 1/2 cup quick oats shopping list
- 24 packets aspartame sweetener (2 tsp equivalent per packet) shopping list
- 1 teaspoon cinnamon shopping list
- ½ teaspoon baking powder shopping list
- ½ teaspoon baking soda shopping list
- Pinch xanthan gum shopping list
- ½ teaspoon salt shopping list
- ½ cup oil shopping list
- 2 large eggs - at room temperature shopping list
- 1 teaspoon vanilla shopping list
- Few drops hazelnut stevia shopping list
- 1/8 teaspoon caramel flavouring shopping list
- 2 cups grated unpeeled zucchini shopping list
How to make it
- Preheat oven to 350 degrees.
- Measure dry ingredients in to a large bowl, and stir to combine.
- Measure oil in to another bowl and whisk in the two eggs. Stir in wet flavourings then stir in shredded zucchini.
- Pour the wet over dry, and mix together swiftly with a wooden spoon.
- Fill muffin cups full and smooth tops (silicon, or with muffin papers),
- Bake for 26-28 minutes until firm and lightly browned on top.
