How to make it

  • Preheat oven to 350 degrees.
  • Measure dry ingredients in to a large bowl, and stir to combine.
  • Measure oil in to another bowl and whisk in the two eggs. Stir in wet flavourings then stir in shredded zucchini.
  • Pour the wet over dry, and mix together swiftly with a wooden spoon.
  • Fill muffin cups full and smooth tops (silicon, or with muffin papers),
  • Bake for 26-28 minutes until firm and lightly browned on top.
