How to make it

  • In medium pot, combine quinoa and water.
  • Bring to a boil over high heat.
  • Reduce heat to low, cover and simmer for 12-15 minutes until quinoa is tender and water has been absorbed.
  • Remove from heat and let stand, covered, for 10 minutes.
  • Cool completely.
  • In a large bowl, stir together cooled quinoa, mangos, edamame, bell peppers, almonds, raisins, onions, coconut and cilantro.
  • Set aside.
  • In a small bowl, whisk together olive oil, lime juice, vinegar and honey.
  • Pour over salad and mix well.
  • Add salt and pepper to taste and mix again.
  • Chill until cold.
