How to make it

  • Saute the onions in oil until just translucent.
  • Stir in the cayenne or spices and ginger.
  • Add the carrots and saute a couple more minutes.
  • Mix in the potatoes and stock.
  • Bring the soup to a boil and then simmer for about 15 min. until the vegetables are tender.
  • Pour in the tomato juice and with a stick blender, puree the soup until well blended and no chunks remain.
  • Add more stock or tomato juice for a thinner soup to desired consistency.
  • Garnish with scallions/chives prior to serving.
  • Enjoy.
