West African Peanut Soup

- 2 cups chopped onion shopping list
- 1 tbsp. veg. oil shopping list
- 1/2 tsp. cayenne shopping list
- 1 tsp. grated fresh gingerroot shopping list
- 1 cup chopped carrot shopping list
- 2 cups chopped sweet potatoes shopping list
- 4 cups vegetable stock shopping list
- 2 cups tomato juice shopping list
- 1 cup smooth peanut butter shopping list
- 1 cup chopped scallions or chives shopping list
How to make it
- Saute the onions in oil until just translucent.
- Stir in the cayenne or spices and ginger.
- Add the carrots and saute a couple more minutes.
- Mix in the potatoes and stock.
- Bring the soup to a boil and then simmer for about 15 min. until the vegetables are tender.
- Pour in the tomato juice and with a stick blender, puree the soup until well blended and no chunks remain.
- Add more stock or tomato juice for a thinner soup to desired consistency.
- Garnish with scallions/chives prior to serving.
- Enjoy.
