Cinnamon Apple Muffins

- 1 1/2 cup oats (not instant) shopping list
- 1/2 cups boiling water shopping list
- 1 cup all purpose flour shopping list
- 1/2 cup whole wheat flour shopping list
- 3/4 cup of brown sugar shopping list
- 2 tsp. baking powder shopping list
- 1 tsp. baking soda shopping list
- 2 tsp. cinnamon shopping list
- 1/2 tsp. salt shopping list
- 1/4 cup each unsweetened applesauce and honey shopping list
- 1 egg shopping list
- 3 tbsp. melted butter or margarine shopping list
- 1 tsp. vanilla shopping list
- 1 1/2 cups peeled, cored, and finely chopped apples shopping list
- cinnamon (or cinnamon sugar) to sprinkle on top (optional) shopping list
How to make it
- Preheat oven to 350F.
- Line a 12 cup muffin tin with cupcake liners.
- Pour boiling water over oats in a medium bowl.
- Stir and let stand for 20 minutes.
- Combine both flours, sugar, baking powder, baking soda, cinnamon and salt in a large bowl. Set aside.
- In a small bowl, whisk together honey, applesauce, egg, butter and vanilla.
- Add applesauce, egg, butter and vanilla.
- Add applesauce mixture to oats and stir until smooth.
- Add oat mixture to flour mixture and stir until dry ingredients are moistened.
- Fold in chopped apples.
- Divide bater among 12 muffin cups.
- Sprinkle each muffin lightly with cinnamon sugar (I just used cinnamon) if desired.
- Bake for 20 minutes, or until a wooden pick inserted in center of muffin comes out clean.
- Remove from pan and let cool.
