How to make it

  • Preheat oven to 350F.
  • Line a 12 cup muffin tin with cupcake liners.
  • Pour boiling water over oats in a medium bowl.
  • Stir and let stand for 20 minutes.
  • Combine both flours, sugar, baking powder, baking soda, cinnamon and salt in a large bowl. Set aside.
  • In a small bowl, whisk together honey, applesauce, egg, butter and vanilla.
  • Add applesauce, egg, butter and vanilla.
  • Add applesauce mixture to oats and stir until smooth.
  • Add oat mixture to flour mixture and stir until dry ingredients are moistened.
  • Fold in chopped apples.
  • Divide bater among 12 muffin cups.
  • Sprinkle each muffin lightly with cinnamon sugar (I just used cinnamon) if desired.
  • Bake for 20 minutes, or until a wooden pick inserted in center of muffin comes out clean.
  • Remove from pan and let cool.
