Eggplant Slices W/ Tomatoe & Cheese

- 1 medium size eggplant (do not peel) shopping list
- 1-2 cloves of minced garlic shopping list
- 1 tsp pepper shopping list
- 1/4 tsp oregano, paprika shopping list
- salt to taste shopping list
- 1 heaping tablespoon parmesan cheese shopping list
- 3-4 tablespoons of olive oil shopping list
- Sliced fresh tomatoe shopping list
- Mozzarella slices (approx 12-14) (best to buy at deli and have them slice to about 1/2" slices shopping list
How to make it
- 1. Slice washed eggplant to about 1/2" thick, layer onto baking sheet lined with parchment paper. Salt each slice with salt and then turn over and salt other side.
- 2. In mixing bowl mix: garlic, pepper, oregano, paprika, salt and parmesan cheese. Add 2-3 tablespoons of olive oil and mix
- 3. Score each eggplant slice like a tic-tac-toe board (2-3 across/2-3 down)
- 4. Brush eggplant with seasoning mixture (use it all up)
- Bake at 350 for about 15 minutes (not too long, so not to over cook)
- Note: optional - spray each slice with olive oil
- 5. Place one slice of tomatoe on each slice and then top with a slice of mozzerella.
- 6. Return to oven and cook will cheese is completely melted.
- Optional: If wanted, after step 6 place under broiler to melt more.
