How to make it

  • 1. Slice washed eggplant to about 1/2" thick, layer onto baking sheet lined with parchment paper. Salt each slice with salt and then turn over and salt other side.
  • 2. In mixing bowl mix: garlic, pepper, oregano, paprika, salt and parmesan cheese. Add 2-3 tablespoons of olive oil and mix
  • 3. Score each eggplant slice like a tic-tac-toe board (2-3 across/2-3 down)
  • 4. Brush eggplant with seasoning mixture (use it all up)
  • Bake at 350 for about 15 minutes (not too long, so not to over cook)
  • Note: optional - spray each slice with olive oil
  • 5. Place one slice of tomatoe on each slice and then top with a slice of mozzerella.
  • 6. Return to oven and cook will cheese is completely melted.
  • Optional: If wanted, after step 6 place under broiler to melt more.
