How to make it

  • 1. Heat oil in pot and saute onion, garlic, lemon peel, salt & pepper until onion is soft (about 3 minutes)
  • 2. Stir in barley, and broth and bring to boil. Reduce heat and cover.
  • 3. Simmer covered about 45 minutes or till barley is cooked. Half way thru cooking stir thoroughly for 15 seconds and recover.
  • 4. If liquid has evaporated, add more broth (I like this dish with liquid)
  • 5. Add shrimp, peas and spinach and simmer til shrimp is no longer pink and peas are tender. ** About 5-10 minutes.
  • **6. Add about 1/4 cup parmesan cheese and stir into liquid.
  • Sprinkle with parsley when serving
