Shrimp With Peas And Barley

- 1 tbsp olive oil shopping list
- 1 onion finely diced shopping list
- 2 garlic cloves minced shopping list
- 1/2 tsp lemon peel shopping list
- 1 tsp pepper shopping list
- 1 tsp salt (to taste) shopping list
- 1 cup pearl or pot barley (not instant) shopping list
- 4-5 cups chicken broth shopping list
- Peeled and deveined shrimp (large size (31-40)) shopping list
- 1-1/2 cup frozen petite peas shopping list
- 1 tbsp butter shopping list
- Optional: spinach shopping list
- Parsley if wanted shopping list
How to make it
- 1. Heat oil in pot and saute onion, garlic, lemon peel, salt & pepper until onion is soft (about 3 minutes)
- 2. Stir in barley, and broth and bring to boil. Reduce heat and cover.
- 3. Simmer covered about 45 minutes or till barley is cooked. Half way thru cooking stir thoroughly for 15 seconds and recover.
- 4. If liquid has evaporated, add more broth (I like this dish with liquid)
- 5. Add shrimp, peas and spinach and simmer til shrimp is no longer pink and peas are tender. ** About 5-10 minutes.
- **6. Add about 1/4 cup parmesan cheese and stir into liquid.
- Sprinkle with parsley when serving
