Easy Korean Cucumber Kimchee

- 1 pound English or Persian Cucumbers, halved lengthwise and cut into 1-inch pieces shopping list
- 1/4 cup sea salt shopping list
- 1 bunch chives, cut to 1 1/2 inch pieces shopping list
- 1/2 yellow onion, thinly sliced and cut to 1 inch pieces shopping list
- 1 teaspoon salted shrimp, finely minced or 1 teaspoon fish sauce shopping list
- 2 tablespoon red pepper shopping list
- 1/2 inch minced fresh ginger shopping list
- 2-3 cloves garlic, minced shopping list
How to make it
- Wash and prepare cucumber, mix in sea salt and allow to sit at room temperature (minimum 30 minutes), drain cucumber juice, do not rinse.
- Add in remaining ingredients, allow to sit at room temperature for several hours and refrigerate before serving. Enjoy!
