Larissa's Oat Apricot Bars (air Fryer)

- WET INGREDIENTS: shopping list
- 1/2 c water shopping list
- 1/2 c apricots (ideally unsweetened, no sulphites) shopping list
- 1/2 c dates shopping list
- 1/4 c honey shopping list
- 2T coconut oil shopping list
- 5 grinds or 1 pinch salt shopping list
- DRY INGREDIENTS: shopping list
- 1 c oats shopping list
- 3/4 c toasted seed mix (pumpkin, sesame, sunflower seeds) or alternative shopping list
- 1 t vanilla shopping list
- 2T chia seeds shopping list
- 2/3 c shredded coconut, ideally long enough pieces to be chewy shopping list
How to make it
- Boil the wet ingredients on the stove for 10 minutes or until a paste is formed. You may need to smush the apricots with a fork.
- Let paste cool a bit.
- Combine paste with all dry ingredients EXCEPT coconut in food processor.
- Blitz to combine, then stir in coconut.
- Bake in airfryer for 15 minutes at 160 d C, then flip and bake 5 minutes on the other side.
- Let cool before cutting into bars.
