This is a very nice cake bursting with great apple flavor. It's very easy to make but tastes like you slaved for hours. Smells incredible while baking. Enjoy

Ingredients
  • 2 cups coarsely grated apples
  • 1 cup sugar
  • 1 egg
  • 1/4 cup vegetable oil
  • 1 cup all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 cup pecans
  • 1 teaspoon vanilla

Directions
  1. Combine apples and sugar in a bowl.
  2. Beat egg and oil together and add to apples.
  3. Combine dry ingredients and add to apple mixture then mix well.
  4. Stir in pecans and vanilla then pour batter into greased square baking pan.
  5. Bake at 350 for 45 minutes.
