This meatloaf is as good or better than the "animal protein" version, and with cholesterol levels as they are, this vegetarian version is good tasting and good for you. It"s
really good as a meatloaf sandwich

What happens if the veggies are microwaved or baked in step 3? The point of sauteeing the veggies in step 3 is to ensure that they are cooked when the meatloaf is completed, correct?

It's not so much the fact that the veggies are cooked. sauteeing them brings out the flavors and makes them more intense.
Not sure what microwaving would do...
I was actually wondering if it would mess it up too much if the walnuts were left out, and if instead of feta cheese, something like cheddar was used......

I'm not a vegetarian but made this for a veggie friend. Tastes good and well impressed with result. I'd like to have some in the freezer on standby....

I have never tried freezing it, it never lasted long enough, but, once it's cooked, it should freeze just fine.
