Magical Greens Recipe
These are incredible. I obtained this recipe from an estate sale several years ago and it is now a mainstay in my home all year long. Everyone loves it. I usually serve it with grated fontina or gruyere cheese over the top. Yummers.

Ingredients
  • 3 cups greens such as spinach, kale, chard or a combination
  • 1/4 cup vegetable stock
  • 1 tablespoon finely chopped shallots
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper

Directions
  1. Wash greens and remove any tough stalks then cut into 2" lengths.
  2. Bring stock and shallots to a simmer in a skillet over medium high heat.
  3. Cook 1 minute then add greens, salt and pepper.
  4. Toss quickly until greens are barely wilted.

Mine turned out extremely salty and peppery. Did I not use enough greens? How do you measure cups of greens?

Alterations


Your recipe is so HEALTHY! A less healthy but still fantastic recipe none-the-less is to put some bacon fat in a frying pan and cook onions and garlic and then dump in the greens and cook and toss until well wilted. Yum!
