Ingredients
  • 1 16-oz. can pumpkin
  • 3½ cups flour
  • 3 eggs
  • 2 cups sugar
  • ½ cup oil
  • 2 tsp. baking soda
  • ½ cup applesauce
  • ½ t. salt
  • 2/3 cup orange juice or cider
  • 4 tsp pumpkin pie spice

Directions
  1. Preheat oven to 350°F.
  2. In a large bowl, mix pumpkin, eggs, oil and juice until well blended.
  3. Sift together flour, sugar, baking soda, salt and spices.
  4. Add dry ingredients to pumpkin mixture; beat until smooth.
  5. Pour batter into two greased and floured loaf pans.
  6. Bake for 1 hour or until bread tests done.
  7. Remove bread from pans and cool on a wire rack.
