This is a "cheater" cake, as I use a box cake mix as the base. It's still delcious though. Busy days sometimes require help from our boxed cake friends!

Ingredients
  • 1 lemon cake mix, prepared as directed and placed in a 9x13-inch cake pan
  • 32 ounces ricotta cheese
  • 3/4 cup sugar
  • 4 eggs
  • 1 teaspoon vanilla
  • lemon zest
  • powdered sugar

Directions
  1. In a mixing bowl, blend together ricotta cheese, sugar, eggs and vanilla.
  2. Pour over top of the cake mix batter in the pan.
  3. Bake at 350° for 1 hour.
  4. Cool and cut into squares.
  5. Shake powdered sugar on top and grate some lemon zest on top of the powdered sugar.
