Creamy Orange Ambrosia Pudding

- 3/4 cup sugar shopping list
- 3 tablespoons quick cooking tapioca shopping list
- 1 egg well beaten shopping list
- 3 cups orange juice shopping list
- 1-1/2 cup whipped topping thawed shopping list
- 1/2 cup flaked coconut shopping list
How to make it
- In medium saucepan combine sugar, tapioca and egg then blend well.
- Stir in orange juice and let stand 5 minutes.
- Cook mixture over medium heat stirring constantly for 8 minutes then remove from heat and cool 20 minutes.
- Fold in whipped topping and coconut.
- Spoon into 6 dishes then refrigerate until serving time.
