How to make it

  • Drain apricots reserving juice then slice apricots and set aside.
  • In a saucepan combine 1/3 cup orange juice, brown sugar and reserved apricot juice then bring to a boil.
  • Reduce heat and simmer uncovered for 10 minutes.
  • Combine cornstarch and remaining orange juice until smooth then stir into apricot juice mixture.
  • Bring to a boil then cook and stir for 2 minutes then stir in vanilla and reserved apricots and serve over frozen yogurt.
