Ingredients
  • 1 1/2 lbs. flounder fillets
  • 1 onion, finely minced
  • 1 c. dry white wine
  • 1 1/2 TB flour
  • 2 TB butter, melted
  • 1 c. hot cooking liquid
  • 1/2 c. heavy cream
  • 1 (8oz.) can minced clams, drained

Directions
  1. Arrange fillets in a shallow baking dish, add minced onion and dry white wine. Bake the fillets in a preheated 325ยบ oven until they are just done or for 15 to 20 minutes.
  2. Transfer the fillets carefully to a heatproof serving dish and keep them warm. Reserve 1 c. cooking liquid.
  3. Make a sauce with the flour blended with melted butter. Gradually add the 1 cup of hot cooking liquid. Simmer the sauce, stirring often, until it is smooth and thickened, then, add heavy cream and minced clams. Taste the sauce for seasoning, stir it until it is hot but not boiling, and pour it over the fish fillets.
  4. Put the dish under a broiler for a few minutes until the sauce bubbles and begins to glaze. Serve while hot.
