Baked Sole with Mango

- 2 tsp. soy sauce shopping list
- 1 clove garlic, minced shopping list
- 1-1/2 lbs. sole fillets shopping list
- 1 cup chopped mango or peaches shopping list
- 1 tsp. grated ginger root shopping list
- 2 Tbsp. lemon juice shopping list
- 1 tsp. sugar shopping list
- 1/4 tsp. salt shopping list
- dash white pepper shopping list
How to make it
- Preheat oven to 375 degrees.
- Place fillets in a single layer in glass baking dish. Mix soy sauce with garlic and spread over fish. Let stand at room temperature for 30 minutes to marinate.
- Combine mango, ginger, lemon juice, and salt and pepper. Spread this mixture over the fish and bake at 375 degrees for 10 minutes, or until fish flakes easily when tested with fork.
