Black Beans And Fusilli Recipe
This super easy one dish skillet meal is vegetarian!

Ingredients
  • 10 oz. can vegetable broth
  • 1/2 cup water
  • 6 oz. pkg. black beans with fusilli pasta mix
  • 1/2 cup sun dried tomatoes (not in oil), cut into thin strips
  • 2 green onions, chopped
  • 1/2 cup feta cheese, crumbled

Directions
  1. In heavy saucepan, bring vegetable broth and water to boil over high heat. Stir in mix package (large pouch and packet). Return to a boil. Reduce heat to low, cover and simmer for 10 minutes.
  2. Add sun-dried tomatoes and simmer 5 minutes more, stirring occasionally. Add green onions and cheese and serve immediately.

I'm not sure why this recipe of yours hasn't gotten rave reviews yet! In this current economy of outrageously priced food, this black bean and pasta dish looks fantastic. Great protein, great carbs, a perfectly cheap and easy dish for my family of 5 tomorrow night! I'm glad I found it!
