Couscous Chicken Salad

- 1/4 cup vegetable oil shopping list
- 1/3 cup orange juice shopping list
- 1 tsp. cumin shopping list
- 1 tsp. dried coriander shopping list
- 1/2 tsp. turmeric shopping list
- 1/2 tsp. salt shopping list
- 1/4 tsp. cinnamon shopping list
- 1/4 tsp. pepper shopping list
- 1-1/2 cups uncooked couscous shopping list
- 2/3 cup slivered dried apricots shopping list
- 1-1/2 cups boiling water shopping list
- 2 (12 oz.) cans chicken, drained shopping list
- 11 oz. can mandarin oranges, drained shopping list
- 1/3 cup slivered almonds, toasted shopping list
How to make it
- In small bowl, for salad dressing, combine oil, juice, cumin, coriander, turmeric, salt, cinnamon and pepper and blend well with wire whisk. Set aside.
- In large bowl, combine couscous and apricots; add boiling water and cover. Let stand for 5 minutes, then fluff with fork.
- Add chicken, oranges, almonds and salad dressing and toss gently to coat. Cover and chill if desired.
