Hummus In Pita Bread Recipe
These are good, not sure how to classify them other than appetizer or good as a light lunch item with a side salad. Enjoy.

Ingredients
  • 1 cup canned chickpeas liquid reserved
  • 1/3 cup tahini paste
  • 1-1/2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic
  • 1/2 teaspoon paprika
  • 1/4 cup fresh chopped parsley
  • Salt and pepper to taste
  • 12 mini pitas
  • Chopped olives and tomatoes optional

Directions
  1. In a food processor puree chickpeas, tahini, olive oil, lemon juice, paprika and garlic until smooth adding a little of the reserved liquid if the mixture seems too thick.
  2. It will be slightly grainy.
  3. Season with salt and pepper.
  4. Cut pita pockets in half and fill each with about 2 tablespoons of hummus.
  5. Top with chopped olives and tomatoes if desired.
