Ingredients
  • Pre boiled potatoes about 6medium
  • Parks 'Hot and Sagey Sausage' half lb
  • Salt ,white pepper, caraway seeds
  • Onion (finely chopped) 2 tblsps
  • parsley (optional)
  • Butter 2 tblsps

Directions
  1. Peel potatoes (or,not)
  2. Slice into cubes about 3/8"square
  3. Add butter to skillet over medium heat
  4. Add the onion to sweat one minute
  5. Drop in the cubed spuds and fold but not stir
  6. Meanwhile, (in a separate cold pan ) add the five sections
  7. of the half pound package of thawed from frozen hot and sagey sausage
  8. The meat is raw, so discard any utencils used to slice and press the pork
  9. I use a cold potato masher to gently press down each pattie and run the masher under cold water each time (Prevents sticking)
  10. Wash hands.
  11. Fold again the taters add salt pepper and caraway seeds
  12. Place pan with patties over the lowest flame
  13. and flip them several times til they are starting to brown
  14. .
  15. Tilt pan to run off any pork fat and using a pizza wheel, slice up small cubed of the sausage
  16. Turn off the burner and with a slotted spoon, scoop out the sausage cubes and add to the potatoes equally
  17. Lower the flame under the potatoes and fold the meat and taters equally
  18. Take two minutes to make toast , poach some eggs to serve on them,
  19. shut off the gas and yell out,
  20. "Time for Yum Yums"
